Wish you all a Very Happy and Prosperous New Year !!!!

Watermelon is one of the most refreshing, thirst quenching fruit available year round. Watermelon is not only delicious but also very nutritious.Have you ever thought about the white part of watermelon, the one just below the red fruit portion that we normally discard along with the skin and wondered if you can use it in cooking.. But this part of watermelon is having a lot of vitamins, minerals, fiber and especially Antioxidants which is very important for our body. This time when I went to Mumbai Amma made the halwa with watermelons white skin. She saw this in some cookery show long back. It really tastes very yummy and delicious same like bottle gourd halwa only color is different. Here comes the recipe ….

Ingredients :-

Finely grated watermelon skin-1 & 1/2 cup (Only white part not red or green skin)
Sugar- 1 cup
Milk-2 cups
Ghee-4tsp
Fried Nuts & raisins - 1 tbsp
Cardamom powder-1/4tsp

Method:-

Cut water melon and remove the red fruit and and grate the White part.. Squeeze and remove the water.

Heat ghee in a pan .Fry the grated watermelon skin till all the water is evaporated & raw smell goes off.

Add milk, close with a lid & cook in medium flame till it is fully cooked.Keep stirring in middle.

Then add the sugar and stir continuously, after we add sugar keep stirring till water evaporates.

Then add cardamom powder & nuts mix well and Serve it warm.

Tips:-

This skin will be a bit hard to cook, so you can also pressure cook to save time.
