Sri Nandana Nama Samvatsara Ugadi Subhakankshalu and Happy Gudi Padwa to Everyone !!!

Dahi vada with Zero oil

A very popular dish all over India and each region in India has its own recipe for making these Vada’s. Typically the Vada’s have green chillies and ginger added to them. This recipe does not have them and vadas are fried in water instead of oil. This recipe is low in fat and less in calories and no cholesterol at all ,so you can eat as many as you want without giving up on your cravings.
My mother saw this recipe in television and she shared with me. I found this interesting and immediately came into my mind is Manasi's Healthy Cooking Event and I tried it. And really Dahi vadas came out very well and were really very tasty. It was hit in my family. All vadas finished within no time......so i thought of sharing with you all.......

Ingredients:
1 cup urad dal (black gram lentil without skin)
salt
Water

For Dahi:
4 Cups thick yogurt
1/4 water to whisk yogurt
1 tsp chat masala
1/2 tsp red chili powder
1 teaspoon freshly roasted and powdered cumin powder
salt
2 tsp sugar (according to sweetness)
Finely chopped coriander leaves
Date and Tamarind chutney for garnishing (optional)

Preparation of Vadas:

1. Soak urad dal for 4 hours and then grind it into smooth paste along with salt.
2. The batter should be thick enough. Grind using very less water.
3. Take a katori and cover its mouth with a wet cloth. Hold the cloth tight from below so as to get flat surface on top. Put 1 tbsp. of urad dal paste on the top of the wet cloth and slightly flatten it with wet hands. Make a small hole in the centre.
4. Heat water in a pan, water should be boiling drop slowly, vada in the boiling water . First vada will settle down at bottom and after few minutes it will come up.Keep it for 1 minute and then remove vada form pan.Similarly make all the badas. You can fry 5-6 badas at a time depending on how big is your kadhai.

Vadas settled in water

Vada in boiling water coming up

Vadas after frying in water

5. Once you are done with all the badas,Place the Vada’s in a serving bowl and pour the yogurt mixture evenly over the Vada’s, covering them completely.
Refrigerate until serving.

Preparation of Dahi:

1. Whisk the yogurt by adding little water. It should be thick.
2. Add salt, sugar to it and keep it refrigerated for 1/2 hour.

Final Dahi Vada:

1. In a serving bowl, keep vadas and pour dahi on them.
2. Sprinkle it with chaat masala ,roasted cumin powder ,red chilli powder .
3. Garnish with chopped coriander and tamarind chutney. Serve cold.

These taste awesome......And they’re good for everyone as they are fried in water :-)

    HI
maybe ur recipe is very good but d term used 'frying in water' is what i did not understand u can only boil a product in water u cant fry it
    Sireesha said...
    Hi Veena,

Okay.. You can take it as you wish.. As we use normally fry in oil, I
used the term "fry in water" when I was describing the process.

But I don't think the term "Fry" or "Boil" matters here. What matters is
WATER IS BEING USED INSTEAD OF OIL when making the vadas.

Hey Siree, I was just scouting blogs for some low fat snack and hit on this. OMG! I am so thrilled...my hubby loves dahi vada but I always hold him back 'cause of their high fat content. gonna try this today itself girl. thanks a real huge bunch!!!
    Sireesha said...
Dershana -Definitely try it and let me know the results.
    Dershana said...
sireesha, i tried them yesterday evening. came out well except for the shape. but they were a little hard, any sggestions??
    Sireesha said...
Dershana - Actually this vadas are not as soft as dahi vadas fried in oil they are little bit hard but to reduce hardness u can add little bit of soda to the batter and make vadas.
To get the soft vadas after soaking ,The yogurt mixture should not be too thick. It should be slightly thicker than buttermilk so that the vadas can soak the water.

Thanks for trying out and informing me.
    Dershana said...
yes, i will try adding the soda in next time. but, hey i did like the taste :-)

thank you for the fat free recipe

    Sireesha garu,
Is it really possible ? I am wondering. I usually avoid oil in my recipies. I found this one. Such a great recipie. nenu dahi vada laagaa kaakundaa, maamulu ga gaarelu la vestay ela vuntaayi Gattigaa vuntaayaa ? Or bagane vuntaayaa ? Nenu repu dasara ki cheddamani anukuntunnanu.
Hope you will have time to reply my question.
    Thankfully

    Sireesha said...
Shilpa actually this vada with zero oil taste better with Dahi only. It might not be tasty if you eat like gaarelu.

    Sireesha garu,
Dussera Subhakankshalu. Nenu ivala garelu try chesanu. Mee style lo Dahi vada chesanu. Good. But without dahi it is not as good as dahi vada. So i came up with another thought. I made plain garelu without oil on Dosa Pan. They came well. We enjoyed with Gongura pachhadi. Try once.

Thanks for your recipie, and your reply.
    Sireesha said...
Thanks for trying dahi vada and informing me..Thanks for ur information this time I will definitely try gaarelu using ur method.

Hello Sireesha - How are you? I have an oil free dinner party for few friends tonight! I tried maki ng these vadas for the first time! My batter was not thick enough, so even though the vada sank, and then came up - it did not hold its shape as nicely as yours! . I then thought of microwaving it. So I just took tablespoon of batter in a glass, and microwaved it on high for 90 seconds. This worked perfectly! Thanks for the delcious recipe idea! I cant wait to see what my guests are going to say for an oil free vada!!
